One particularly lively spot in the Tsukiji Outer Market is “Maguroya Kurogin Tsukiji Honten” (hereafter referred to as “Maguroya Kurogin”).
The shop is known for specializing exclusively in hon-maguro (Pacific bluefin tuna), the most prized type of tuna.

Maguroya Kurogin is located at the intersection of Namiyoke Street and Tsukiji West Street, the main streets of Tsukiji Outer Market.
At the storefront, you’ll find a refrigerated display case brimming with bluefin tuna sushi and sashimi—an eye-catching lineup that looks as good as it tastes.

Try rare kamatoro in this special fatty tuna platter
The shop’s most popular dish is the “Special Fatty tuna/Very Fatty tuna/Medium tuna,” featuring three types of fatty tuna: kamatoro (fatty tuna from behind the gills), ōtoro (fatty tuna), and chūtoro (medium fatty tuna).

The kama refers to the collar area behind the gills of the tuna. The kamatoro portion is especially prized for its rich fat content and is extremely rare—only about 500 g (1.10 lbs) can be harvested from a 100 kg (220.46 lbs) tuna.
Many people may have tried otoro before but have never had the chance to taste kamatoro.

Kamatoro is recognizable by its marbled pink color, resembling fine meat. It’s even richer than otoro, with an incredibly smooth texture that practically melts in your mouth.
Additionally, you can enjoy the umami and sweetness of the fat in otoro, known as premium sushi topping at sushi restaurants, and chu-toro, which offers a well-balanced harmony of fat and lean meat flavor. This dish allows you to enjoy a luxurious comparison tasting.

Maguroya Kurogin has its own specially made sashimi soy sauce that is crafted to enhance the flavor of tuna and other sashimi.
When eating sushi, it’s recommended to lightly dip the fish side in the soy sauce. You can also remove the topping, dip it in soy sauce, and place it back on the rice.

Normally, a “3-color sashimi” set refers to three different types of fish. But the “Three Colors Sashimi” at this bluefin tuna specialty shop offers three distinct cuts of bluefin tuna: otoro, chutoro, and akami.

Visit around 8:00 AM, and you can watch the staff slice freshly delivered tuna right before your eyes, turning it into sushi and sashimi with expert precision.

The specialty of Maguroya Kurogin is the “Tuna Roll,” a rolled sushi containing bluefin tuna and takuan (chopped pickled daikon radish).
The roll includes generous amounts of akami and chutoro, made with tasty leftover trimmings from the sashimi prep. It’s wrapped together with takuan, sesame seeds, and roasted seaweed.

Take a look at the generous volume of akami and chutoro compared to the rice—it’s clear you’re in for a luxurious treat.
The roll is pre-cut for easy eating, and as you chew, the akami and chutoro blend together and melt in your mouth.
It also pairs perfectly with the white rice, the roasted sesame seeds and pleasantly crunchy takuan adding a nice accent.

“マグロール,” Tuna Roll 1,500 JPY (tax included)
Although it’s available for general sale from 10:30 AM, the Tuna Roll is limited in quantity and often sells out. If you want to be sure to get one, it’s best to pre-order.
For reservations, you need to visit between opening time and 10:30 AM and pay in advance. The receipt with the number given at payment is required for pickup, so be careful not to lose it.
Pickup is between 10:30 AM and 1:00 PM – simply return at a convenient time. Show the receipt and you can receive your order.
Note: The Tuna Roll is take-out only, but staff can direct you to a nearby rest area where you can enjoy it comfortably.

Morning is prime time for this tuna that draws crowds!
At Maguroya Kurogin, English support is available—including English menus, QR codes that guide you to the rest area, and translations of common phrases used at the entrance, such as instructions on how to line up during busy hours. Even if you don’t understand Japanese, you can enjoy a smooth visit.
When eating at the standing tables and counters at the storefront, staff provide complimentary tea service.
The staff, known for their cheerful and pleasant customer service, have earned a reputation, making it understandable why there are many repeat customers who visit multiple times during their stay in Japan.
