Shabu-shabu, where thinly sliced beef is briefly dipped in dashi broth, is highly popular for its simple approach to enjoying the umami of meat and vegetables. It’s one of Japan’s most quintessential hot pot dishes.
“Kin no Dashi Shabu Hachiuma Shinjuku Main Store” (referred to hereafter as “Hachiuma Shinjuku”) is conveniently located in the heart of Shinjuku’s Kabukichō area.
It’s especially popular for serving premium Kuroge (Japanese Black) wagyū beef shabu-shabu, and has been featured in various media outlets.

Located in the basement of a building, the restaurant offers a serene atmosphere that feels worlds away from the lively streets of Kabukichō above.
Inside, you’ll find both counter and table seating, along with private dining rooms. There are two sister locations nearby, and depending on availability, you may be guided to one of them during peak hours.
Indulge in premium shabu-shabu ingredients with “Golden Dashi”
The restaurant’s specialty is its amber-colored special kin no dashi (“Golden Dashi”) made with Hokkaidō kombu kelp and bonito.
Shabu-shabu made with this dashi is packed with irresistible appeal that has captivated many customers.

“雲丹とA5ランク黒毛和牛のしゃぶしゃぶ,” Uni and A5-Rank Kuroge Wagyu Shabu-Shabu (available for orders of 2 or more, photo shows portion for 2) 3,608 JPY per person (tax included)
A particularly popular option is the “Uni and A5-Rank Kuroge Wagyu Shabu-Shabu,” which combines A5-grade Kuroge wagyu—the highest grade of beef—with uni (sea urchin) in a lavish shabu-shabu course!

The shabu-shabu features shoulder loin cuts of wagyu beef. The combination of beautifully marbled wagyu and fresh sea urchin creates a visually impressive dish. Treat yourself to a luxurious opportunity to enjoy these premium Japanese ingredients together.

The eating method is the same as typical shabu-shabu. Once the Golden Dashi in the pot is heated, briefly dip and swish the wagyu beef.
After about ten seconds, when the beef starts to change color, it’s ready to enjoy.

Important note! The fatty wagyu will fall apart if cooked too long.
For best flavor, the key is not to overcook it. Remove the beef while it still has a slightly pink color, wrap it around the uni, and enjoy it with ponzu sauce.

Another popular approach is to pre-wrap the uni in the wagyu, then swish both in the broth together. The melt-in-your-mouth texture of the wagyu and the rich flavor of the uni come together in perfect harmony—an irresistible combination.
Passing the wagyu through the broth also lightly reduces its richness, letting the pure flavor of the meat shine through.
Finish with udon to savor the delicious broth
After enjoying a good portion of the wagyu, it’s time to appreciate the vegetables. Add the accompanying vegetables into the pot, and once cooked, enjoy them with ponzu sauce.
As the vegetables start to dwindle, try combining them with any remaining beef for a delicious final bite.
After finishing the wagyu and vegetables, the finale awaits: choose either zōsui (Japanese rice porridge) or udon noodles to fully enjoy the “Golden Broth.”

The broth, now infused with the essence of wagyu and vegetables, is bursting with umami.
Add the udon noodles that come with the course, and after simmering briefly, it’s ready. You might want to save some wagyu, uni, or vegetables to enjoy together with the udon.

The thick udon noodles stay pleasantly firm even after simmering, making them a satisfying and hearty addition to the meal!
Enjoy every last bit with the delicious broth.
