The restaurant sources torafugu (Japanese pufferfish) daily from Shimonoseki City, renowned for its fugu selection. Torafugu, known as the king of fugu, is celebrated for its plump and pleasantly firm texture.

Just the right amount of searing brings out the fugu’s flavors, making it firm and concentrating its umami.
Enjoy Japanese pufferfish with ginger or momijioroshi (grated daikon radish tinted red with chili pepper), and dip it in ponzu (yuzu-soy) sauce, which is enhanced with fugu extract for flavor.

Kawara soba, a popular local dish in Yamaguchi Prefecture, is served on heated plates shaped like kawara, the curved roof tiles of traditional Japanese houses. It features green noodles made with matcha from the famous Uji tea-growing region in Kyoto, kinshi tamago (shredded omelette), and sweet and spicy beef. The noodles are dipped in a savory dipping sauce.
At Double Roppongi, the noodle dish is a popular choice both at lunch and dinner.

The sauce in their “Yamaguchi’s Famous Kawara Soba” is on the sweet side, and served warm. To enjoy a variety of flavors, they highly recommend adding lemon slices and momijioroshi to the sauce halfway through your meal.
The charm of kawara soba lies in enjoying its two different textures. On the one hand, you can savor the chewy noodles at the top and middle, and on the other, your can delight in the crunchy noodles at the bottom heated to a light crisp by the hot plate. As it’s rare to find in Tokyo, it’s a must-try for those interested.

A rare type of wagyu steak! Enjoy Chōshū wagyu with truffle salt and wasabi
Double Roppongi’s “Chōshū Wagyu Steak” comes highly recommended by the staff. The standout feature of Chōshū wagyu, a rare type of Kuroge (Japanese Black) breed wagyu from Yamaguchi Prefecture, is its melt-in-the-mouth texture. To achieve the best taste, the restaurant cooks the steak at just the right temperature.

The lean meat used in their steak is taken from a cut known to better capture the beef’s natural umami. Since the meat is seasoned only with salt and pepper, eating it plain lets you appreciate its rich sweetness. Adding truffle salt or wasabi, however, transforms the flavor, making the sweetness more pronounced.
In addition to two private rooms, one of which is equipped with a karaoke set, the restaurant has table and counter seats. In other words, it’s also a great spot for solo diners.
