Located in Shinjuku, “Hokkai-sushi to Tempura Sushiyama Shinjuku” (hereinafter referred to as “Sushiyama”) is a restaurant that primarily uses those delicious ingredients from Hokkaido.
The restaurant’s theme is what they call a “Day Trip Hokkaido Experience,” allowing customers to experience a travel-like atmosphere through their meals.
A bounty of fresh ingredients and sushi made right on the spot!
In the center of the restaurant, there’s a raw kitchen where chefs prepare one of the signature dishes at “Sushiyama,” the “Hokkai Sushi Assortment (Premium).”
This assortment platter features sushi made with fresh seasonal fish from Hakodate, Hokkaido.
Hakodate is a region in Hokkaido blessed with abundant seafood throughout the year, with various marine delicacies being brought to its ports.
The ingredients in the platter vary according to the season. During our visit, it included eight kinds, such as raw octopus, flounder, and salmon roe.
The exceptional freshness gives each ingredient great taste and a delightful texture.

Particularly, the salmon roe boasts a level of richness and bounciness that is extraordinary.
The initial surprise comes from the elasticity of the surface of the roe and the satisfying popping sensation as you bite into it. Then, the profound umami and subtle sweetness that spread across your tastebuds provide a second wave of delightful surprise.
It’s a delicacy where the deliciousness gradually permeates with each bite!
While these specific sushi items weren’t featured during our visit, there are days when hokke (Okhotsk atka mackerel) and samegarei (roughscale sole) are used, which is a rare treat for sushi in the Tokyo area.
Because of Sushiyama’s dedication to authentic Hokkaido ingredients, eating here can be considered a lucky chance!
The “Crab Dashi and Salmon Roe Japanese Rolled Omelet” overflows with deliciousness
As we mentioned earlier, the salmon roe at Sushiyama is truly tasty.
Aside from enjoying it as a sushi topping, there’s another dish where you can savor its flavor called the “Crab Dashi and Salmon Roe Japanese Rolled Omelet.”

As you can see from the photo above, the defining feature of the Crab and Salmon Roe Japanese Rolled Omelet is the abundant topping of salmon roe that seems like it could overflow from the dish.
After the staff brings the dish to your table, they pour the salmon roe onto the omelet right in front of you.
The omelet uses an original broth blend of kombu (kelp), mackerel flakes, bonito flakes, and tuna flakes. The overlapping flavors of each ingredient adds layers to the overall taste.
What sets apart the flavor of Sushiyama’s omelet is that they use dashi extracted from crab meat. The result is a mellow saltiness that elevates the richness, and the balance with the flavor of salmon roe is outstanding.
The “5-Kinds of Tempura Platter” is a huge hit with international diners
Sushiyama’s “5-Kinds of Tempura Platter,” a tempura platter of tempura and seafood, is a highly popular order among customers visiting Japan.
Like the sushi platter mentioned above, the contents of the tempura platter also vary depending on the season and the availability of ingredients.

The texture of the freshly fried tempura is really something else. The restaurant adjusts the frying time for each ingredient, which results in a succulent and crispy texture throughout.
The vegetables are delightfully tender, and the seafood has a springy texture. The chef’s skill shines through in the way they fry, bringing out the deliciousness of each and every ingredient.
Because of the top-level quality of the ingredients used in the tempura, their inherent sweetness and umami are allowed to really stand out, especially when enjoyed with just a simple sprinkle of salt, as recommended..
