However, at Ebiyama, they cook the beaten egg separately and then place it over the rice. The egg is semi-cooked and creamy, dissolving in your mouth. The sweet taste of the sauce-covered egg is followed by the spicy kick of coarse ground pepper that spreads on your palate.
Before adding the beaten egg to the pot, they infuse the oil with coarse ground pepper by gently frying it, enhancing its aroma.
