Typically, when egg is used in rice bowl dishes, it’s poured over the ingredients in the pot and cooked together. However, at Ebiyama, they cook the beaten egg separately and then place it over the rice. They then top it with fried shrimp and tonkatsu, creating a perfect balance where the crispy coating stays intact while absorbing just the right amount of sauce.
