Scattered around the edge of the plate is homemade karasumi (dried mullet roe) marinated in Saikyo miso (a traditional type of miso from Kyoto), which is unusual for karasumi.

The finishing touch is a homemade egg yolk sauce. This sauce, made with house-prepared simmered soy sauce, harmonizes all the ingredients’ flavors, creating unity.
