It’s rare to find a sushi restaurant where a skilled chef prepares top-quality sushi right in front of you, yet is casual enough for first-timers to feel at ease.
However, such an ideal place exists in Shibuya.
“Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA” opened in April 2024 as an affiliated restaurant of the popular “Kaiten Sushi Ginza Onodera Main Store” in Omotesandō. With the Michelin-starred name of “Ginza Onodera” behind it, expectations are high when visiting this restaurant!
Authentic Edo-style sushi in front of Shibuya Station
Although Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA has kaiten (conveyor belt sushi) written in its name, chefs actually serve freshly made sushi piece by piece over the counter.
Moreover, the sushi ingredients are fresh and high-quality, rivaling even upscale restaurants.
The sushi ingredients are top-grade, personally sourced from Toyosu Market, the largest seafood market in the Tokyo area, by Akifumi Sakagami, the executive chef of the parent restaurant Ginza Onodera.
Thanks to the long-standing relationships and trust built with these wholesalers, they can consistently secure high-quality ingredients.
The tuna, in particular, is premium quality from Yamakou, a wholesaler that has now become renowned worldwide.
The “Aburi Toro” (seared fatty tuna) made with this fish features decorative knife work, an extra touch characteristic of Edo-style sushi.
The lightly seared tuna retains its firmness while the decorative cuts make it tender. The sweetness and umami of the tuna spread across your palate, with grated ponzu sauce tightening the aftertaste.
“炙りトロ,” Seared Fatty Tuna 850 JPY (tax included)
The high level of sushi ingredients at the restaurant is also evident in their gunkan roll using high-grade bafun uni (green sea urchin).
“馬糞雲丹軍艦(ばふんうにぐんかん),” Bafun Uni Gunkan 1,200 JPY (tax included)
The uni is piled so generously that it fills your mouth with umami the moment you take a bite.
Its rich yet not overpowering umami and sweetness, along with the creamy texture, will have you exclaiming its deliciousness with every mouthful.
“Red sushi rice” that levels up the flavor of the toppings
No discussion of sushi is complete without mentioning the rice!
At Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA, “red sushi rice” made with red vinegar is used to enhance the umami of the sushi ingredients.
Uniquely, the restaurant blends sugar with red vinegar that has been aged for three to four years.
The red sushi rice at Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA has a mild saltiness with a hint of sweetness.
They use Haenuki, a brand of rice from Yamagata Prefecture. Its grain size, water absorption, and every other aspect make it ideal for sushi.
Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA offers a unique and entertaining sushi experience
While offering authentic Edo-style sushi, Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA also serves unique sushi with playfulness and flexibility, not bound by tradition.
“SHIBUYAマウンテン,” SHIBUYA Mountain 1,200 JPY (tax included)
One such dish is the “SHIBUYA Mountain.”
This sushi, topped with various seafood, cucumber, nagaimo yam, and other diverse ingredients on red sushi rice, is unique to the Shibuya branch.
Scattered around the edge of the plate is homemade karasumi (dried mullet roe) marinated in Saikyo miso (a traditional type of miso from Kyoto), which is unusual for karasumi.
The Saikyo miso marinade gives it a milder taste and deeper richness.
The finishing touch is a homemade egg yolk sauce. This sauce, made with house-prepared simmered soy sauce, harmonizes all the ingredients’ flavors, creating unity.
The SHIBUYA Mountain not only stands out visually but also achieves a perfect balance of flavors despite its diverse ingredients.
It’s a proud creation of the restaurant, born after much trial and error to ensure no single ingredient overpowers the others.
The “SHIBUYA Scramble Roll”, inspired by Shibuya’s iconic scramble crossing, is another signature dish alongside the SHIBUYA Mountain.
Despite being seasoned only with rich simmered shoyu, it offers layers of umami thanks to the freshness of the sushi ingredients used.
Like the daily flow of people at the scramble crossing, various seafood umami flavors intersect in your mouth.
“SHIBUYAスクランブルロール,” SHIBUYA Scramble Roll 1,150 JPY (tax included)
Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA continues the legacy of its parent store with meticulous detail
Unlike sushi restaurants where the chef’s selection is served, the charm of Kaiten Sushi Ginza Onodera MUSUKO SHIBUYA lies in its casual atmosphere where you can order from just one piece.
In addition to selecting sushi ingredients with care, they also make homemade ingredients like karasumi and condiments like simmered soy sauce.
The reason for this effort is their commitment and pride in the belief that “what we make ourselves with care tastes the best.”
The array of sushi, prepared with Edo-style techniques that bring out the best in carefully selected ingredients, leaves a lasting impression on all who visit!
