At Shabu-Shabu Retasu Shibuya Center-gai, they offer special set menus during lunchtime on weekdays. Among these, the “Kobe Beef Course” is a standout, priced at just 3,800 JPY (tax included) while offering a hearty portion.

The set includes Kobe beef, pork, a selection of vegetables, tofu, boiled gyoza dumplings, rice, and Chinese-style noodles, ensuring you get a well-rounded meal.

The star of the course is the meat: four different cuts, including Kobe beef karubi (Japan’s version of Korean kalbi or galbi) and loin, as well as fragrant pork belly and pork loin. The meat is intentionally sliced thicker because the restaurant believes that “leaving diners satisfied after their meal is essential.”

When you dip the Kobe beef into the honey-infused broth, which adds a touch of sweetness and richness, you’ll be greeted by an irresistibly tender texture that will leave you smiling. The broth itself is exquisite, enhancing the sweet, rich flavor of the Kobe beef fat and filling your mouth with umami.

Another delight at Shabu-Shabu Retasu Shibuya Center-gai is the variety of free condiments available. With over 30 types of seasonings and condiments that change with the seasons, including ponzu (a soy-citrus sauce), sesame sauce, olive oil, rock salt, and shichimi (Japanese seven spice), the possibilities for customization are endless.

One unique condiment is truffle oil, which pairs surprisingly well with shabu-shabu. It adds a luxurious aroma without overpowering the broth’s sweetness, elevating the flavor to a whole new level. You can create your own original sauce by mixing and matching the condiments, providing limitless ways to enjoy your meal.

Enjoy fresh vegetables with Shabu-Shabu Retasu’s creative menu

The charm of solo shabu-shabu isn’t just in eating at your own pace—it’s also in being able to enjoy your meal however you like. Some guests at Shabu-Shabu Retasu Shibuya Center-gai even skip cooking the vegetables, preferring to eat them raw with the condiments. Now that’s creative thinking!

The fact that their vegetables are delicious raw is a testament to their quality. At Shabu-Shabu Retasu, only the freshest vegetables are used, sourced directly from contracted farmers.

The vegetable assortment in the course menu changes with the seasons. In July when we visited, it included asparagus, cabbage, watermelon radish (“red radish” on their English menu), red-leaf lettuce, potatoes, carrots, Chinese cabbage, both red and yellow bell peppers, and broccoli—ten different types in all. Each vegetable is crisp and fresh, needing just a quick dip in the nabe broth to bring out its natural flavor and texture.

Fresh

For those with a big appetite, Shabu-Shabu Retasu also offers an all-you-can-eat course, which allows you to choose from about 25 types of vegetables. Their selection of mushrooms is particularly impressive, featuring around ten varieties, ranging from king trumpet and shimeji mushrooms considered standards in Japan, to the rare lion’s mane mushroom.

The noodles are thin, so they cook quickly—just wait two to three minutes after adding them to the pot. The harmony of flavors you experience when you slurp them is truly remarkable. The broth’s rich, mellow flavor blends seamlessly with the noodles, delivering a comforting, satisfying taste.
