The meat is intentionally sliced thicker because the restaurant believes that “leaving diners satisfied after their meal is essential.”

In July when we visited, it included asparagus, cabbage, watermelon radish (“red radish” on their English menu), red-leaf lettuce, potatoes, carrots, Chinese cabbage, both red and yellow bell peppers, and broccoli—ten different types in all. Each vegetable is crisp and fresh, needing just a quick dip in the nabe broth to bring out its natural flavor and texture.
For those with a big appetite, Shabu-Shabu Retasu also offers an all-you-can-eat course, which allows you to choose from about 25 types of vegetables. Their selection of mushrooms is particularly impressive, featuring around ten varieties, ranging from king trumpet and shimeji mushrooms considered standards in Japan, to the rare lion’s mane mushroom.
