HIIRAGI GINZA’s signature dish is the “Rich Matcha Full Matcha Set.”

The set includes “Rich Matcha and Brown Sugar Cream Shaved Ice,” “Rich Matcha Chocolate,” and “Matcha Financier,” all popular matcha sweets, plus a drink of your choice.

The featured ingredients are premium matcha carefully selected only from famous tea-producing regions ranging from Yame in Fukuoka Prefecture to Uji in Kyoto Prefecture. Different tea leaves are used for each menu item, allowing you to enjoy comparing the differences in aroma and flavor.

The shaved ice is made by layering fluffy ice and vividly green matcha syrup alternately many times. It looks like a silk dress fluttering, and watching it being prepared live is a delight.

It’s paired with a subtly sweet red bean paste made from Dainagon adzuki beans, sourced from Hokkaidō.

Additionally, it is finished with brown sugar cream from Kagoshima Prefecture, resulting in a rich and elegant taste.

Even just the shaved ice portion alone offers a full taste of matcha aroma and umami. Pair it with the red bean paste and cream, or drizzle on syrup to your liking, and the flavors evolve with each bite, ensuring you stay delighted until the very last spoonful.

Alongside the shaved ice, the set includes “Rich Matcha Chocolate” created by the chef of the much-in-demand restaurant “unis,” known for its consistently full reservations. This is a terrine-style matcha chocolate.

And there’s the “Matcha Financier,” baked with “Miyakosaryo’s” highest-grade matcha and domestic butter, and finished with a touch of Maldon salt as a hidden accent—one of many meticulously crafted matcha sweets that showcase attention to every detail.

The drink chosen by the Umami bites editorial team for the set was the “Rich Matcha Latte.” This combines Uji matcha from “Yamasa Koyamaen,” a historic Kyoto tea garden established in 1861, with Japanese milk.

You won’t find another mitarashi dango with a texture so smooth it sinks into the dish.

The dough made from domestically produced glutinous rice combines with the sauce made from Marudaizu soy sauce (made exclusively with whole soy beans) and authentic mirin to create a refined sweetness that spreads across the palate.

Two flavors are available: “Plain” and “Sudachi,” (a type of Japanese citrus) which adds citrus for a refreshing, tart impression.

Recommended during strawberry season (around April to May), the “Amarin Strawberry Rich Shaved Ice Set” includes “Rich Amarin Shaved Ice,” a “Strawberry Macaron,” and a drink.

“Amarin” is the highest-grade variety that won first place in Japan at strawberry competitions for three consecutive years.
