東銀座にあるミシュラン獲得ラーメン店のはるちゃんラーメン

Awarded the Michelin Bib Gourmand for three consecutive years since 2023, just two years after opening in 2021!

“Haru-chan Ramen,” a ramen shop, achieved this remarkable feat just a few years after its debut.

Born in Shinbashi, Tokyo, Haruchan Ramen opened its flagship store, “Ginza Haru-chan Ramen,” in July 2024. This popular shop sees a constant stream of customers throughout the day, from local workers and residents to international tourists.

A Michelin-worthy masterpiece! Exquisite broth

The hallmark of Ginza Haru-chan Ramen is undoubtedly its broth, prepared fresh daily in-house.

The combination of pork knuckles, carefully selected dried sardines, and aromatic vegetables creates an extraordinary umami. The first sip of the soup is light, followed by a deep and lingering richness. The remarkable balance of flavors is simply incredible!

Ginza Haru-chan Ramen uses only salt seasoning

As you continue eating, the flavor of the salted sauce intensifies, likely due to temperature changes, enhancing the overall experience. The richness increases, transforming into an even more impressive taste.

Yet the saltiness is never overwhelming, maintaining another perfect balance of flavors. The saltiness of the base sauce, the sweetness of the aromatic vegetables, and the punch of pork and dried sardines blend to create a unique richness.

This stand-out soup is generously, almost overflowingly, poured into the bowl, a common style among members of the “Chan Noren Union” to which Ginza Haru-chan Ramen belongs.

This approach reflects the restaurant’s dedication to ensuring customers enjoy piping hot ramen down to the last sip, showcasing their passion for the broth.

The noodles, specially made by Daruma Seimen in Shinjuku, Tokyo, are the perfect match for the broth. Their smooth surface and chewy texture provide a luxurious mouthfeel.

As a bonus, Ginza Haru-chan Ramen offers free large servings of noodles, allowing you to savor this exceptional combination to your heart’s content.

The toppings are just as impressive, each one a star in its own right.

Special Ramen

The “Special Ramen” comes loaded with toppings including marinated egg, wheat gluten, chāshū (Japan’s version of char siu), nori, and bamboo shoots.

The pork chashu, simmered daily with the broth, is particularly exceptional.

Two types of pork are used: shoulder and belly. Each slice is freshly cut to order, releasing the soup’s umami along with the sweet, juicy flavors of the fat with every bite.

The use of these two different cuts allows for a pleasant contrast of texture. You’ll be captivated by difference between the moist shoulder meat and the melt-in-your-mouth fatty belly!

Another must-order topping is the “Ariake Nori Seaweed”, harvested from the Ariake Sea in Kyūshū and available for an additional 250 JPY (tax included).

This premium seaweed is reserved exclusively as a topping (it’s different from the nori seaweed already included in the ramen), chosen for its superior aroma.

First savor it on its own, and you’ll notice its crisp texture and delicate melt-in-your-mouth feel. Wrap it around the noodles, and it enhances the dish with its rich aroma, transforming an already perfect bowl into something even more remarkable.
