Where to Try Rich Dashi and Creative Oden in Tokyo’s Ginza District

おでん 俺のだし

Oden is a dish in which a variety of ingredients—such as vegetables like daikon radish and seafood-based items like chikuwa (tube-shaped fish cake) and kamaboko (another type of fish cake)—are simmered together in a large pot.

Tokyo is home to many restaurants where oden takes center stage.

The ingredients used in oden and the type of broth it’s simmered in are where each shop gets to show off its unique style. Recently, some restaurants have started offering so-called “creative oden,” made with ingredients that traditionally weren’t used in oden at all.

Oden Orenodashi interior

At “Oden Orenodashi,” which opened in the Ginza district of Tokyo in 2014, you can enjoy both traditional and inventive takes on oden.

The interior is primarily counter seating, with a narrow entrance that extends deep into the restaurant.

Large bags can be checked at the counter, but since space is limited, using a coin locker at a nearby station is recommended.

Exquisite delicacies simmered in oden dashi

The pride of “Oden Orenodashi” is, without a doubt, its broth.

It’s a balanced combination of Hokkaido kombu kelp, bonito flakes from Makurazaki in Kagoshima Prefecture, flying fish from Nagasaki Prefecture, mackerel flakes from Shizuoka Prefecture, and chicken bone soup that has been simmered for a long time.

This broth infuses a variety of oden ingredients with rich umami, enhancing their depth of flavor.

Types of oden at Oden Orenodashi

Inside the counter sits a large pot of oden, with steam rising as the ingredients await serving.

They offer an impressive variety of about 30 different oden ingredients, from standards to seasonal specialties!

The serving method varies depending on the oden ingredient. Some are served directly from the pot into a dish, while others receive additional preparation after an order is placed.

This variety of flavors and preparation styles is part of what makes this shop so appealing.

Hanpen, daikon, egg, rolled cabbage

(from the left) “大根,” Daikon Radish 380 JPY (tax included) “はんぺん,” Hanpen (soft fluffy white fish cake) 280 JPY (tax included) “玉子,” Tamago (Egg) 280 JPY (tax included), “ロールキャベツ,” Stuffed Cabbage Roll 780 JPY (tax included)

Popular menu items include hanpen (soft fluffy white fish cake), with a light and delightful texture, and the daikon radish, which is thick yet thoroughly infused with broth to its core.

The restaurant’s tamago (egg) is a rarity for oden—it’s soft-boiled, with a runny center. Meanwhile, the “Stuffed Cabbage Roll” is seasoned with a peppery meat filling inside, making it a great match for alcohol.

Parmesan Daikon

“パルミジャーノ大根,” Parmesan Daikon 480 JPY (tax included)

One of their unique oden creations is the “Parmesan Daikon.” Daikon radish is simmered in broth and topped tableside with freshly grated Parmigiano-Reggiano cheese.

The savory depth of the broth-soaked daikon combines with the umami and aroma of the cheese for a new and exciting flavor experience.

Creative oden with surprising variety

As mentioned earlier, some oden items are cooked to order at the restaurant.

Large clams

“大はまぐり,” Large Clam 1,580 JPY (tax included)

For example, the ōhamaguri (Large clam) features clams from Kujukuri, Chiba Prefecture, which are heated in oden broth once an order is placed.

Cooked to perfection, the clams are incredibly juicy, and their intense umami enriches the broth with a deep, satisfying flavor.

Highland Lettuce

“高原レタス,” highland lettuce 380 JPY (tax included)

The highland lettuce is heated in oden broth before serving, allowing you to enjoy it as an oden ingredient while maintaining a crisp texture.

A finishing sprinkle of black pepper adds a pleasant accent.

Potatoes

“じゃが芋,” Potato 480 JPY (tax included)

Potato is a popular ingredient among oden dishes. While many restaurants serve boiled potatoes simmered in an oden pot, Oden Orenodashi offers a potato dish with a unique twist.

At the restaurant, the potatoes are first deep-fried to create a crisp outer layer, then generously topped with oden broth — a unique preparation that brings out both a rich umami flavor and a fluffy interior.

Its rich, full flavor also makes it a great choice to pair with alcohol.

The combination of freshly fried ingredients and oden broth is something that, once experienced, many people can’t get enough of.

Fried Tilefish

“甘鯛あられ揚げ,” Fried Tilefish coated with Rice Crackers 880 JPY (tax included)

Another dish is the “Amadai Arare-age.” In this creative dish, arare (crunchy puffed rice coating) surrounds tender tilefish, soaking up the broth for a unique texture. The refined flavor of the fish gives it the feel of a high-end Japanese dish.

Fried mochi

“揚げ餅,” Fried Rice Cake 480 JPY (tax included)

The agemochi (Fried Rice Cake) consists of bite-sized fried mochi rice cakes immersed in broth with aosa seaweed.

The soft mochi soaked in umami-rich broth pairs beautifully with the seaweed’s briny aroma. It’s so popular that many customers go back for seconds.

Savor unique Japanese ingredients and popular sake

At Oden Orenodashi, you can enjoy not only oden but also à la carte dishes. The “Assorted Hairy Crab Platter” is particularly popular with tourists from overseas.

Luxurious Hairy Crab Platter

“毛蟹絢爛盛り,” Assorted Hairy Crab Platter 3,980 JPY (tax included)

In this luxurious dish, a generous portion of horsehair crab (“hairy crab” in their English menu) is topped with an overflowing amount of uni (sea urchin) and ikura (salmon roe).

This one plate lets you indulge in Japan’s finest seafood delicacies.

Oden Broth Ramen

“おでん出汁ラーメン,” Oden Broth Ramen 480 JPY (tax included)

Why not finish your meal with something a little different?

This unique ramen uses the restaurant’s prized oden broth as the base, letting you savor its complex, delicate flavor in a simple noodle dish.

Types of Japanese sake

Japanese sake by the glass from 1,080 JPY (tax included)

The restaurant offers a variety of alcoholic beverages, including popular brands of Japanese sake.

If you want to find one that suits your taste preferences, feel free to ask the staff.

English, Korean, and Simplified Chinese menus

In addition to Japanese, menus are available in English, Korean, and Chinese (simplified). The menus include photos, so even those unfamiliar with oden ingredients can order with confidence.

Despite its playful name (which translates to a bold way of saying “my oden dashi”), Oden Orenodashi serves up seriously authentic creative cuisine. It’s definitely a spot worth visiting when exploring Ginza!
